Butternut Squash & Sage Purée

Butternut Squash & Sage Purée

Thanksgiving doesn’t have to mean a table full of heavy, overly rich dishes that leave everyone half-asleep by 3 PM. A lot of us want lighter, cleaner options now — food that still tastes like the holiday but doesn’t drag you down for the rest of the day.

This butternut squash + sage purée checks every box. Comforting, simple, and unbelievably clean.

It still feels like Thanksgiving… just without the “why did I eat that?” part.

Ingredients

• 1 large butternut squash, peeled + cubed

• 2 garlic cloves

• 2 tbsp olive oil or avocado oil

• ¼ cup coconut milk (full-fat for best texture)

• 5–6 fresh sage leaves

• ½ tsp sea salt

• Black pepper to taste

• Optional: pinch of nutmeg

Instructions

1. Roast the squash.

Preheat oven to 400°F. Toss squash with olive oil, salt, pepper, and whole garlic cloves.

   Roast 25–30 minutes until soft.

2. Blend it.

Transfer everything to a blender or food processor.

   Add coconut milk and sage.

   Purée until creamy.

3. Adjust.

Add more salt, pepper, or coconut milk depending on the texture you like.

4. Serve warm.

A drizzle of olive oil on top looks great.

Why This Works for Thanksgiving

It’s holiday comfort without the heaviness.  Warm. Cozy. Easy on digestion. You won’t need a food-coma nap afterward — that’s the whole point.
