Butternut Squash & Sage Purée

This butternut squash + sage purée checks every box. Comforting, simple, and unbelievably clean.
It still feels like Thanksgiving… just without the “why did I eat that?” part.
Ingredients
• 1 large butternut squash, peeled + cubed
• 2 garlic cloves
• 2 tbsp olive oil or avocado oil
• ¼ cup coconut milk (full-fat for best texture)
• 5–6 fresh sage leaves
• ½ tsp sea salt
• Black pepper to taste
• Optional: pinch of nutmeg
Instructions
1. Roast the squash.
Preheat oven to 400°F. Toss squash with olive oil, salt, pepper, and whole garlic cloves.
Roast 25–30 minutes until soft.
2. Blend it.
Transfer everything to a blender or food processor.
Add coconut milk and sage.
Purée until creamy.
3. Adjust.
Add more salt, pepper, or coconut milk depending on the texture you like.
4. Serve warm.
A drizzle of olive oil on top looks great.
